Jamaican Jerk Shrimp: Easy and Delicious Dinner Recipe

Jamaican Jerk Shrimp

This dinner was super easy to make! This meal takes less than 30 minutes to prepare and serves 2. It tastes like something from The Cheesecake Factory, but healthier and cheaper.  Here’s the details…

Ingredients:

1 Box of Margaritaville Jamaican Jerk Shrimp (Frozen) *Found at Food Lion

2 Large Zucchini Chopped

1 Cup of Fresh Pineapple Chunks

1 Package of Rice (or Cauliflower Rice)

Jamaican Jerk Shrimp

Directions:

Remove frozen shrimp and place in large frying pan. No need to add oil to your pan, the frozen shrimp are coated with seasonings that turns into a sauce. Cook for 8-10 minutes or until shrimp are opaque white on the inside.

Uncooked Frozen Shrimp

In a separate pan add in your chopped zucchini. *To make cooking easier, chop your zucchini and sprinkle with sea salt and let it sit for 5-10 minutes. This helps pull the water out of the vegetable and makes your zucchini less mushy and cook quicker. Once your zucchini is almost done, add the fresh pineapple into the pan. *You can substitute fresh pineapple for frozen pineapple, just thaw beforehand. However, I would not recommend using canned pineapple.

Pineapple Chunks

Mix the Shrimp in with the Zucchini and Pineapple to allow all the spices and sauce to coat everything evenly. This sauce does have some kick to it so I only added sea salt to taste. *If you don’t like spicy food or a lot of seasonings, a great option is to cook chicken and add to this dish. You can also add broccoli, edamame, or another vegetable that you prefer!

Chopped Zucchini

For the rice I used the Veetee Basmati Rice. It takes 2 minutes to cook in the microwave; I guess that’s why the package says “rice and easy” ha! *You can substitute the rice for cauliflower rice for a lower carb option.
